- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- For the Crumble Topping:
- 1 cup all-purpose flour
- ½ cup cold butter diced
- ¼ cup granulated sugar
- ½ teaspoon sea salt
- 1 teaspoon vanilla extract
- 2 –3 tablespoons cold water
Prepare the Mango Filling
In a mixing bowl, combine diced mangoes, sugar, lemon zest, and lemon juice. Mix well and set aside.
Make the Crumble Topping
In a food processor, pulse flour, butter, sugar, sea salt, and vanilla until crumbly. Gradually add cold water and pulse until the mixture holds together when pinched.
Assemble the Crumble
Preheat oven to 350°F (175°C).
Press half the crumble into the bottom of the baking dish to form a crust.
Spread mango filling evenly over the crust.
Top with the remaining crumble mixture.
Bake
Bake for 45–50 minutes, until golden brown and bubbly.
