Mini Cheese Ball Bites

Mini Cheese Ball Bites are the perfect party appetizer—creamy, bite-sized, and packed with flavor. Easy to customize, make-ahead, and always a crowd favorite.

Ingredients
  

  • 12 oz 1½ blocks cream cheese, softened
  • 1 cup shredded cheddar cheese avoid pre-shredded
  • 1 teaspoon garlic salt with parsley flakes
  • 1 teaspoon paprika
  • Freshly ground black pepper to taste
  • 8 slices bacon cooked and chopped
  • 1/3 cup pecans finely chopped
  • 1/4 cup chives chopped
  • 18 pretzel sticks

Instructions
 

  • Line a small baking sheet with parchment paper and set aside.
  • In a medium bowl, mix softened cream cheese, shredded cheddar, garlic salt, paprika, and black pepper until smooth.
  • Use a small cookie scoop to form 14 mini balls. Place them on the prepared baking sheet.
  • Refrigerate for at least 1 hour to firm up.
  • In a shallow dish, mix chopped bacon, pecans, and chives.
  • Roll the chilled cheese balls in the coating mixture.
  • Insert a pretzel stick into the center of each cheese ball.
  • Refrigerate until ready to serve.

Notes

Use freshly shredded cheese for better texture.
Can be made up to 8 hours in advance—add pretzels just before serving.
Store leftovers without pretzel sticks in an airtight container for up to 4 days.
Customize with different cheese types or seasonings.
