  • Step 1: Prepare the Eggs
  • Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • Separate the egg whites and yolks. Place the whites in one bowl and the yolks in another.
  • Add cream of tartar to the egg whites. Use an electric mixer to beat until stiff peaks form. This step is crucial for achieving a fluffy texture.
  • Step 2: Prepare the Cottage Cheese Mixture
  • In the bowl with the yolks, add cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil.
  • Mix until smooth and well-combined.
