This cottage cheese bake is an easy and delicious breakfast recipe made with a combination of cheeses, eggs and jalapenos.

Ingredients
  

  • 10 medium eggs
  • 16 oz cottage cheese plain
  • 3 oz Cheddar cheese grated
  • 2 oz Parmesan cheese grated
  • 3 jalapenos deseeded and chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 350F/170C degrees and lightly grease a baking dish or casserole dish. We used a 9 x 13 inch dish.
  • In a large mixing bowl, beat the eggs until well combined.
  • Add the chopped jalapenos, cottage cheese, Cheddar cheese, Parmesan cheese, salt and pepper. Mix well.
  • Pour the mixture into the baking dish and bake in the oven for 35-40 minutes until the top is golden brown and center is set.
  • Cut into squares and serve.

Notes

Makes 6 large squares.
If the bake is taking too long to set, cover the baking dish with silver foil to help firm up the egg mixture.
