Ingredients
  

  • 1/4 cup olive oil
  • 1/2 lemon juiced
  • 1/4 cup coconut milk
  • 3 tbsp coconut aminos
  • 1 tbsp almond butter
  • 1 tsp ginger
  • 1 clove garlic
  • 1 purple cabbage chopped
  • 1 cucumber chopped
  • 1 bag shredded carrots
  • 1 mango chopped
  • 3/4 cup green onions
  • 1 rotisserie chicken or a package of cooked chicken breasts
  • 1 package lettuce
  • crispy rice noodles optional

Instructions
 

  • Make the dressing by combining all ingredients in a high-speed blender.
  • Make salad jars by layering dressing, cabbage, cucumber, carrots, mango, green onions, chicken and lettuce.
  • Store in fridge and enjoy!
