Gently mix dry ingredients into wet just until combined—do not overmix.
Divide batter evenly among muffin cups.
Bake for 15–18 minutes until a toothpick comes out clean. Cool slightly.
Step 5: Add the Cinnamon Sugar Coating
Mix cinnamon and sugar in a small bowl.
Dip warm muffins in melted butter, then roll in the cinnamon sugar until coated.
