Ingredients
  

  • For the Potato Skins:
  • 4 medium russet potatoes
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 lb 225g ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika optional
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon crumbled (6–8 slices)
  • 1/4 cup diced pickles optional
  • 1/4 cup diced red onion optional
  • For the Burger Sauce:
  • 1/4 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • For Garnish:
  • Fresh parsley or green onions chopped

Instructions
 

  • Step 1: Bake the Potatoes
  • Preheat oven to 400°F (200°C).
  • Scrub and dry potatoes, then prick with a fork.
  • Rub with olive oil, season with salt and pepper.
  • Bake directly on the oven rack for 45–60 minutes or until fork-tender. Let cool slightly.
  • Step 2: Cook the Beef
  • In a skillet over medium heat, cook ground beef with garlic powder, onion powder, smoked paprika (optional), salt, and pepper.
  • Cook until browned. Drain excess fat and set aside.
  • Step 3: Prepare the Potato Skins
  • Cut each potato in half lengthwise and scoop out most of the flesh, leaving about 1/4-inch border.
  • Brush inside and out with olive oil and season lightly.
  • Place skin-side down on a baking sheet.
  • Step 4: Fill and Bake
  • Fill skins with ground beef. Top with cheddar cheese, crumbled bacon, and optional pickles or onion.
  • Bake for 10–12 minutes until cheese is melted and bubbly.
  • Step 5: Make the Sauce
  • In a bowl, whisk together mayo, ketchup, and mustard until smooth.
  • Step 6: Garnish and Serve
  • Drizzle sauce over potato skins or serve on the side.
  • Garnish with chopped parsley or green onions and serve hot!

Extra Crispy Skins: Broil for 1–2 minutes after baking for a golden finish.
