Ingredients
  

  • 1 lb lean beef top round, flank steak, or sirloin
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tbsp Worcestershire sauce
  • 1 tbsp honey or brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder optional, for heat
  • 1/4 tsp liquid smoke optional, for extra smoky flavor

Instructions
 

  • Step 1: Slice the Beef
  • Freeze the beef for 30–60 minutes until firm.
  • Slice against the grain into thin 1/4-inch strips.
  • Step 2: Prepare the Marinade
  • In a large bowl, whisk together soy sauce, Worcestershire, honey, spices, and liquid smoke.
  • Step 3: Marinate
  • Add beef strips to the marinade, coat well.
  • Cover and refrigerate for at least 2 hours, preferably overnight.
  • Step 4: Preheat the Air Fryer
  • Set your air fryer to 180°F (82°C) or its lowest setting.
  • Step 5: Arrange and Cook
  • Pat beef dry. Lay strips in a single layer in the air fryer basket—no overlapping.
  • Air fry for 2–3 hours, flipping halfway, until dry but still pliable.
  • Step 6: Cool and Store
  • Let jerky cool completely. Store in an airtight container for up to 1 week at room temp or 2 weeks in the fridge.

🔥 Tips for Success Use Lean Meat: Cuts like top round or sirloin keep better and dry evenly. Ask the Butcher: Request thin, even slices for best texture. Don’t Overcrowd: Space out slices so air can circulate freely. Flavor Variations: Try teriyaki, sriracha-honey, or smoky BBQ marinades. Low Temp is Key: If your fryer lacks a dehydrator mode, keep an eye on doneness at the lowest setting.
