Step 1: Slice the Beef
Freeze the beef for 30–60 minutes until firm.
Slice against the grain into thin 1/4-inch strips.
Step 2: Prepare the Marinade
In a large bowl, whisk together soy sauce, Worcestershire, honey, spices, and liquid smoke.
Step 3: Marinate
Add beef strips to the marinade, coat well.
Cover and refrigerate for at least 2 hours, preferably overnight.
Step 4: Preheat the Air Fryer
Set your air fryer to 180°F (82°C) or its lowest setting.
Step 5: Arrange and Cook
Pat beef dry. Lay strips in a single layer in the air fryer basket—no overlapping.
Air fry for 2–3 hours, flipping halfway, until dry but still pliable.
Step 6: Cool and Store
Let jerky cool completely. Store in an airtight container for up to 1 week at room temp or 2 weeks in the fridge.
