Homemade lemon powder is a simple way to preserve the bright, refreshing flavor of lemons and enjoy it throughout the year. Made from dried lemon peel, this versatile ingredient adds a concentrated citrus aroma to cakes, cookies, marinades, sauces, salad dressings, and homemade spice blends.
Instead of throwing away lemon peels after squeezing the juice, you can transform them into a fragrant powder using just a few simple steps. A small pinch can add a wonderful lemon flavor to many recipes.
Ingredients and Equipment
To prepare homemade lemon powder, you will need:
- 4–6 fresh lemons
- A vegetable peeler or fine grater
- A sharp knife, if needed
- A baking tray
- Baking paper
- A blender, spice grinder, or food processor
- A clean, completely dry glass jar with a tight-fitting lid
Choose fresh lemons with fragrant skins. If possible, select unwaxed lemons intended for culinary use.
Step 1: Wash the Lemons Thoroughly
Wash the lemons under clean running water and gently rub the skins to remove dirt and other surface impurities.
Dry them completely with a clean towel.
If you are concerned about wax or other surface treatments, choose lemons labeled as suitable for use with the peel. Washing cannot remove every type of residue.
Step 2: Remove the Lemon Peel
Use a vegetable peeler to remove thin strips of yellow lemon skin.
Try to avoid removing too much of the white layer underneath, known as the pith. The pith can contribute a bitter taste to the finished powder.
You can also use a fine grater to collect the yellow zest, taking care not to grate deeply into the white layer.
Tip: The yellow outer peel contains much of the lemon’s characteristic aroma, making it ideal for homemade lemon powder.
Step 3: Arrange the Peels for Drying
Spread the lemon peels in a single layer on a baking tray lined with baking paper.
Make sure the pieces do not overlap too much. Good air circulation helps the peels dry evenly.
You can dry lemon peels using either an oven or a food dehydrator.
Step 4: Dry the Lemon Peels
