Cajun Shrimp and Sausage Foil Packets – An Easy, Flavor-Packed Dinner!

  • by

Step 1: Preheat the Oven

Preheat your oven to 425°F (220°C).

Prepare four large sheets of heavy-duty aluminum foil, each approximately 12–14 inches long.

If you’re using regular foil, consider doubling the sheets to help prevent tearing and leaking.

Lightly grease the center of each sheet with a little olive oil.

Step 2: Prepare the Potatoes and Corn

Wash the baby potatoes thoroughly and cut them into small, evenly sized pieces.

Because potatoes take longer to cook than shrimp, they need a head start.

Place the potatoes in a saucepan of boiling water and cook for approximately 8–10 minutes, until they begin to soften but are not completely tender.

Drain the potatoes and set them aside.

If using fresh corn on the cob, cut each ear into several smaller pieces. Frozen corn can also be used, although whole corn rounds provide the traditional seafood-boil appearance.

Step 3: Prepare the Garlic Cajun Butter

In a large mixing bowl, combine the melted butter, olive oil, minced garlic, Cajun seasoning, smoked paprika, onion powder, black pepper, and lemon juice.

Stir everything together until the mixture is well combined.

The melted butter adds richness, while the garlic and Cajun spices create the bold, savory flavor that makes this recipe so delicious.

If you prefer a spicier dish, add a pinch of cayenne pepper or red pepper flakes.

Step 4: Prepare the Shrimp, Sausage, and Vegetables

Add the raw shrimp, sliced smoked sausage, partially cooked potatoes, corn, zucchini, and chopped bell peppers to the bowl.

Pour the Cajun butter mixture over everything.

Toss gently until the ingredients are evenly coated.

Make sure the shrimp and vegetables receive plenty of seasoning so every bite is flavorful.

For the best texture, use raw shrimp rather than precooked shrimp. Precooked shrimp can become rubbery when baked for an extended period.

Step 5: Assemble the Foil Packets

Divide the mixture evenly among the four prepared foil sheets.

Place the ingredients in the center of each sheet, keeping the shrimp distributed throughout the packet.

Bring the long sides of the foil together and fold them over several times to seal the top.

Fold the short ends inward to create a secure packet.

Leave a little room inside each packet for steam to circulate.

Place the packets on a large baking sheet with the seams facing upward to help keep the juices inside.

Step 6: Bake Until the Shrimp Are Cooked

Place the baking sheet in the preheated oven.

Bake for approximately 15–20 minutes, checking for doneness toward the end of cooking.

The exact cooking time depends on the size of the shrimp and the size of the vegetable pieces.

The shrimp should turn opaque and reach an internal temperature of 145°F (63°C). The potatoes should be tender when pierced with a fork.

If the vegetables need more time, carefully remove the cooked shrimp and sausage if practical, then continue cooking the vegetables until tender.

Be extremely careful when opening the packets because hot steam can escape suddenly.

Step 7: Add the Finishing Touches

Once everything is cooked, carefully open the foil packets.

Sprinkle the chopped fresh parsley over the top and squeeze fresh lemon juice over the shrimp and vegetables.

For an extra-rich finish, drizzle a little additional melted garlic butter over each serving.

The combination of buttery sauce, smoky sausage, tender vegetables, and zesty lemon makes every bite incredibly satisfying.

Serve immediately while hot!

How to Make These Foil Packets on the Grill

These Cajun shrimp foil packets are also perfect for outdoor cooking.

  1. Preheat your grill to medium-high heat, approximately 400°F (200°C).
  2. Prepare the ingredients as described above, including partially cooking the potatoes.
  3. Divide the mixture among four foil sheets and seal the packets securely.
  4. Place the packets on the grill and cook for approximately 12–18 minutes, turning them carefully halfway through if needed.
  5. Check that the shrimp reach 145°F (63°C) and that the potatoes are tender.
  6. Open the packets carefully, allowing the steam to escape away from your face and hands.

Grill temperatures vary, so begin checking for doneness toward the lower end of the cooking range.

Tips for the Best Cajun Shrimp Foil Packets

Don’t skip precooking the potatoes. This helps ensure that the potatoes become tender without overcooking the shrimp.

Use large shrimp. Large or jumbo shrimp are easier to cook evenly alongside the sausage and vegetables.

Cut vegetables into similar-sized pieces. Smaller pieces cook more quickly, while larger chunks may need additional time.

Seal the foil properly. A secure packet traps steam and helps keep the ingredients moist.

Adjust the seasoning. Use mild Cajun seasoning for a gentler flavor or add cayenne pepper for extra heat.

Don’t overcook the shrimp. Shrimp cook quickly and can become tough if left in the oven too long.

Finish with fresh lemon. A squeeze of lemon brightens the buttery sauce and balances the smoky sausage.
