Homemade Pickled Beets

Ingredients

  • 2 pounds fresh beets
  • 1 cup white vinegar
  • 1 cup water
  • ½ cup granulated sugar
  • 1 teaspoon salt
  • ½ teaspoon black peppercorns
  • ½ teaspoon whole cloves
  • 1 small cinnamon stick
  • 2–3 thin slices of onion, optional

Step-by-Step Instructions

Step 1: Prepare the Beets

Wash the beets thoroughly under cool running water, removing any dirt from the surface.

Trim the tops and roots, but don’t peel them yet.

Step 2: Cook the Beets

Place the whole beets in a large pot and cover them with water.

Bring the water to a boil, then reduce the heat and simmer for approximately 30–45 minutes, depending on the size of the beets.

They’re ready when a knife or fork can easily slide into the center.

Step 3: Cool and Peel

Drain the cooked beets and allow them to cool until they’re comfortable enough to handle.

Rub or peel away the skins.

Then cover the container and place it in the refrigerator.

Step 9: Let the Flavors Develop

For the best flavor, allow the beets to sit in the refrigerator for at least 24 hours before serving.

The flavor becomes deeper and more balanced after a couple of days.

Step 10: Serve

Serve the chilled pickled beets as a side dish or add them to salads, sandwiches, burgers, or grain bowls.

Tips for Delicious Pickled Beets

Choose firm, fresh beets with smooth skins for the best texture.

Don’t overcook the beets. They should be tender enough to slice easily while still retaining some firmness.

For sweeter pickles, slightly increase the sugar. For a sharper flavor, reduce it.

You can also experiment with spices such as mustard seeds, bay leaves, or a small amount of fresh ginger.

Storage

Keep homemade pickled beets refrigerated in a clean, tightly covered container and use clean utensils when serving.
