This homemade vinaigrette is quick, fresh, and incredibly versatile. With a simple combination of apple cider vinegar, olive oil, mustard, and honey, you can make a flavorful dressing in just a few minutes. It’s perfect for green salads, roasted vegetables, grain bowls, and more.
Ingredients
- 2 tablespoons apple cider vinegar
- 4 tablespoons extra-virgin olive oil
- 2 teaspoons Dijon mustard
- 1 tablespoon honey
- ¼ teaspoon salt, or to taste
- ¼ teaspoon freshly ground black pepper, or to taste
Step 1: Add the Vinegar
Pour the apple cider vinegar into a clean glass jar with a tight-fitting lid.
Step 2: Add the Mustard and Honey
Add the Dijon mustard and honey.
The mustard helps emulsify the dressing, while the honey balances the acidity of the vinegar with a touch of sweetness.
Step 3: Add the Olive Oil
Pour in the olive oil and add the salt and black pepper.
Step 4: Shake
Close the jar tightly and shake vigorously for about 20–30 seconds.
Continue shaking until the ingredients are well combined and the dressing looks smooth and slightly creamy.
Step 5: Taste and Adjust
Taste the vinaigrette and adjust it according to your preference.
- More vinegar for extra tanginess
- More honey for sweetness
- More olive oil for a milder flavor
- A little extra mustard for a stronger mustard taste
- Additional salt and pepper as needed
Step 6: Serve
Drizzle the vinaigrette over your favorite salad and toss well to coat.
It also works beautifully with:
- Mixed green salads
- Tomato and cucumber salads
- Roasted vegetables
- Grilled chicken
- Pasta salads
- Grain bowls
- Steamed vegetables
Storage
Store the vinaigrette in a clean, covered jar in the refrigerator. Because the olive oil may solidify slightly when chilled, let the dressing sit at room temperature for a few minutes and shake well before serving.
Tip: For an extra-smooth dressing, whisk the vinegar, mustard, and honey together first, then slowly drizzle in the olive oil while whisking continuously.
